 Pidgin already supports (and natively uses) UTF-8.  Are you specifically
 asking about enabling Internationalized Domain Names (IDN) support, or

Try to use Arial Unicode font for conversation.

Those fonts have limited character sets.  They do not include Cyrillic. 
 Someone posting to the list, but not copying it to you, suggested 
Arial Unicode.

From my own experience, the font with the widest character set in Pidgin
is Sans

Buddy List is Minimized on Startup

How do I configure Pidgin so that when it starts the buddy list is
not minimized?
The chat window that I have starting up automatically shows up on
the desktop but the buddy list does not unless I double-click it
from the system tray.

The pidgin buddy list starts in the state it was last in when pidgin was
quit. So if you quit pidgin with the buddy list open it will start that
way.
