se non si trova un tag adatto è meglio introdurre un tag nuovo che piegare il 
significato di quelli in uso, e similmente quando c’è solo un tag generico per 
l’oggetto potrebbe aver senso di aggiungere oltre a questo anche un nuovo 
“sottotag”.

Ciao,
con earth_pyramid non c'è nessun tag (cercato sia su taginfo che overpass
turbo), quindi eviterei di introdurlo.
Per l'uso di
natural=stone
che ne dite?
Effettivamente questa formazione è abbastanza particolare, quindi potrei
anche fregarmene e mappare senza farmi troppe seghe mentali ;-)

I would prefer earth_pyramid over hoodoo. According to the English
Wikipedia they are synonyms: https://en.wikipedia.org/wiki/Hoodoo_(geology).
The German Wikipedia article "Erdpyramide" is connected to the English
article "Hoodoo".
