Nope. I've define a new profile for my text messages. How will it be
used automagically?
If it is not 'tied' to any charset and if you select this profile in the
message preview pane, it will be used for all messages except those in
Greek or Turkish.

Not necessarily, you can create profiles not associated to any charset.
I, for example, have two of them. And I select them by right clicking on
message pane.

I think, I thought, there are a wider use of them.
Look at them this way: They are a 'substitute' of the two different
views you could have with PTV and RTV, and with the addition of the
possibility of assigned them to specific charsets.
