You can select Account/IMAP commands/Manage IMAP folders

Then you can select the folders you want to see.

I just installed this version. 

It is up and running well 

Question - is there a help page with guidelines on how to best set up the 
Google as IMAP so I can see just the core folders required?

I am referring to

-> Account > Proprerties > Mail Management > IMAP Options 

And 

How to get rid of the following folders
Drafts, Important, Starred.

Any advice would be appreciated.
