Please check the This field is on address list option. Then you can set
this field as follows:
 - globally visible in Viewer using main menu View | Message header,
 - visible in editor using View| menu in editor window.

deleting HTML attachments with text messages

If I'm going to save any text messages that come with an HTML attachment, I
almost always delete these attachments. However recently I received such a
(subscribed) message but on attempting to delete the HTML attachment with the
right click menu, I found the delete option grayed out. This is the first time
I've noticed this and wondered why or how this was achieved?

The X-mailer I.D. was not used in their header so I can't tell you what they
used to send the mail. One thing the header revealed:

Mime-Version: 1.0
Content-Type: text/html; charset=iso-8859-1
Content-Transfer-Encoding: quoted-printable

Did this have something to do with it? Probably not, but it's the only thing I
can detect of any consequence in the header.

Any ideas why the 'delete' option was removed from this particular HTML
attachment?

You can only delete attached HTML versions (Content-Type:
multipart/alternative), not sole text/html type messages. In this
case, there's actually nothing to delete.
