I setup a mailserver using the lastest toaster and it works pretty well but
it always uses DES-CBC3-SHA encrypted SMTP when communicating with other
toaster built mailservers. How can I turn off 'encrypted SMTP' since we
don't need the encryption in this application.

Works like a charm, just make sure DNS points to the scanning server in
the MX route.

The one thing that you can lose by doing this is chkuser support. Two
workarounds are to use MySQL w/ valias support, or perhaps share the mail
spool via NFS.

That's true about SMTP Auth. However, is there any reason why SMTP Auth
would work OK on PC's with Outlook and Outlook Express but not with OS X
Mac Eudora or Mac Mail? Is there any way to observer the session from the
server end and debug?

Your .qmail-default does not look like a standard toaster install to me.
The plain jane toaster with chkuser-mysql support should say:

As a hack, I've manually edited the vpasswd file and added a
character to the start of both the clear and encrypted passwords.

We just put a one line entry in our startup scripts that allows connections
from port 26 to redirect to port 25. This way customers who are blocked by
their ISPs on port 25 can still connect to our SMTP server. But you can use
any port and as many of these lines as you want.

/var/log/qmail/pop3/current but they only log for only a certain time. I
will like if I can retain them and put them in logrotate like those in
/var/log/secure etc.
