Is port 3483 UDP open on the server and is udp broadcast allowed on the
network.
If this works all lms servers can announce themselfs to the players and
can be found in that menu for easy switching.

I have used the Touch for over 3 years and once in awhile I have a
maddening situation that I only know how to resolve by restoring factory
settings (Which is a bit of a pain).
I took my SBT to Florida where I was running the SBT music Library on my
Laptop.

Yes, 2 different houses 1800 miles apart. Different Routers.

Yes, I have gone to that menu, but my Library does not show up there.

I've run a couple of different devices as server before now, and had no
issues switching server on this screen.
