Xorg.log attached, just in case. Now it goes to the low-graphics mode warning screen but I can actually exit to the console at this stage whereas before I coudn't. I'm not sure if my graphics card is officially supported since it's not on the list here: https://help.ubuntu.com/community/RadeonDr

I've never been able to get to the Console once I get the error message that Ubuntu is starting in low graphics mode. If I opt to "Run in low graphics mode for just one session" the display freezes. The same happens if I opt to "Exit to console login" or if I press Ctrl + Alt + F1 or Ctrl + Alt + B
