Yes, it's annoying, and it's been reported previously.
I suspect the correct way to deal with it is for the gallery app to not
look in places where we don't expect to see photos.

Well, put some music on your device. media-scanner will do the rest. The
album-art will show up in gallery and you can't really remove it any
more. It needs to be music where media-scanner is able to fetch the
artwork. So probably won't work with your own garage band, but any well
known charts
