Thank you Pierre for the solution. I had the same problem and tried
everything. Lost a lot of time on this stupid problem. I cannot believe
this is happening in Ubuntu in 2020. This kind of BS keeps me from
recommending Linux to regular computer users!

in:
/var/log/apt/history.log*
and there should be a record of what command uninstalled that package.

Installed bluez 5.50 -> same result.
Installed linux 5.3 -> same result.
Tried a combination of all the linux/bluez possibilites -> same result.
Until now, I was only looking at the output of btmon (so basically, low
level BT commands).
Then, while I was doing one of the tests above, I tailed

... and still works with all of them today. After deleting
~/.config/pulse to work around bug 1866194
