Ubuntu 19.04 (disco) reached end-of-life on January 23, 2020.

  After some testing, aplay -D hw:2,2 samplename works but there seems
  to be no way to set that in gnome or for other applications?

So, in short, even though Gnome panel allows setting the device, it does
not allow handling correct /output/ when there are multiple choices?
E.g. only optical connected to receiver instead of analog.
