Maybe I needed to add more explicit Breaks in the packaging?

But if evolution-data-server smoothly migrates, I fear that several
packages including key ones like gnome-shell won't run because apps
can't use both libsoup2 and libsoup3 in the same process.

So I'm filing a blocker bug for now.
