I just insert the Unicode characters directly in every place: sites,
emails, texts, documents. I'm doing this for years, with no compatibility
problem. I'm glad the world is not ASCII anymore :)
On the Mac, I just hold the Alt key when pressing the hyphen to get an en
dash (–) and hold Alt+Shift

for my part I use:
- triple hyphen --- for em dash (which I convert to — with txt2tags)
- single hyphen - for everything else (I don't make difference between hyphen
and en dash)
and of course double hyphen for strikethrough with txt2tags
