I am a huge fan of the LTS model. So I stick to 4.5 LTS wherever I can.
But looking at the maintenance dates, I found that 6.0 has now the same
lifespan as 4.5.
So... I think it's the perfect moment to start new projects with 6.0,
which would at some stage be upgraded to the next LTS

Well, if know one uses it, then noone can make it better. After all it
depends on the risk you want to take.

I'd say that if you start now, you should see all stability-related
changes still within your development-phase*. 6.0.x releases will follow
quickly if major issues will be found and I'd say that's something you
can rely on.
What are your specific concerns?
