Have a look at the vmware server offering (it's free). It does
support multi processor hardware. If you have a multi processor host
(recommended for vm usage other than development) then you can set the
vm to use one or two

Similarly to Tony, I use Virtual PC all the time for development, testing
and backups. It has proven stable and very capable, but I would second the
warning about dynamic disks: they are not for production use, and need
regular maintenance.
