When I upgraded to gutsy I no longer had working nvidia drivers
installed. So upon reboot X server starts with the Display settings
dialog using lowest possible resolution. So far so good, but when I
tried choosing nvidia driver from the list and clicked ok X server
restarted
The 100.14.19 driver is crap. Use 9639 instead. I got a GF 7300 card and
I experienced the same problems as you. Downgrading the driver solved it
all. There is a very nice utility called Envy that automatically
installs drivers for you.

No I used envy to setup my graphics drivers and nvidia-settings to set
up xorg.conf. Screen and Graphics Preferences (displayconfig-gtk) does
not work for me at all, it only shows 640x480 mode even though I have
defined 1280x800 in my xorg.conf.
