The software use an icon name, the icon comes from the icon theme. Do
you have an Ubuntu example to describe, what item, which icon is used
and what else you expect?

I am using Tango on Feisty Fawn, however the problem also exists for
Human with all but OpenOffice, for which it uses its own icons.
