For me, the dock didn't freeze. I just wanted to try out cairo-dock from the command line. When finished, I pressed Ctrl-C; this did not terminate dock, but gave me a prompt back, so I did killall cairo-dock. This is what I got: ^C jos@Zyrrup:~$ killall cairo-dock jos@Zyrrup:~$
