Actually, there are instructions to chroot and fix grub on this page

But these steps are performed after the GUI installer already has
crashed (on step 3 of this guide).

I don't see any instructions there to install grub, but you have to
chroot into the target system first to do that:
for f in sys proc dev dev/pts run ; do mount --bind $f /target/$f; done
chroot /target
