Latest version from developers appears to be 667 via PPA.
unetbootin was removed from Ubuntu 18.04 on 2017-11-11, i.e. during its
development period.
See also Debian bug: https://bugs.debian.org/cgi-bin/bugreport.cgi?bug=870974.
Anyone requiring updates should use the PPA:
Current version in Zesty is 608 from 2014, while the latest one is 625 from May
of 2016.
Old version also contains old dependencies like gksu, which no other apps are
using.

The Unetbootin versions in the Ubuntu repos are old
To manage notifications about this bug
Unetbootin is in universe now. Do you mean that it should be moved to
main? That might be a good idea, if it helps keeping it up to date :-)
Who can move a program package from one repository to another one?
Do you need more information?
I have already described the bug in the opening comment.
@ sudodus
I think Unetbootin would be moved to main if Ubuntu makes it its default
boot disk creator, so in that case the importance of this bug would be
"Critical".
The information about how you can make Unetbootin to be upgraded in a stable
Ubuntu release is here:
If this application goes into main, please subscribe me to this bug so I
can raise importance.
