Yes AS I said, I had not installed any other linux or ubuntu
distribution on this laptop before, so I couldn't possibly know if there
was any issues.

releases) I'm referring to the PC you originally reported against (Dell
XPS L521X) not some other PC you used.

As per your 1st question - I don't know that since I've only tried using
3 screens in 16.04, prior to that I had a desktop setup (11.04 to 14.04)
with 2 screens without any problems, either using the nvidia drivers
either the nouveau.
