I can reproduce it also with 3.40.4-1. Starting with
$ WEBKIT_DISABLE_COMPOSITING_MODE=1 evolution
as suggested on https://gitlab.gnome.org/GNOME/evolution/-/issues/1884
is a valid workaround.
