Please note that this feature has been implemented as a checkbox saying Remember this application for $FILETYPE files in GNOME 2.29.92 (Ubuntu 10.04 Beta), however this feature is on by default and fails to function properly (see Bug #550004). -- Open with Other Application not remembering

I would suggest then adding a checkbox on the Open with Other Application screen for Always use this program to open files with this extension. This is much less cumbersome and (in my opinion) more straightforward than having to change Open With in the file properties. Thanks -- Open with
