There is a context menu in update manager with Check/ Uncheck all, so I am
updating this bug report, as the context menu is not easily discoverable.

There's really no need to ask that question - it's quite apparent that
the requested feature has not been implemented in update-manager.
However, you can deselect/select *groups* of updates (i.e. distribution,
security etc,)
