OpenOffice and Evolution are bookmarked applications. In 10.04 (I don't know about other releases) you can change what applications are pinned there. The other windows are the list of running ones, with more than one blue patch indicating more than one window. -- gnome-shell shows static

That works not quite correctly, but maybe a bug from Evolution. In Gnome-Shell menu Evolution starter is shown, but unlike with other applications (Firefox, Pidgin, etc) Evolution is not shown as running with a blue dimmer around the name, but a second icon is shown for the running evolution
