Seb, this issue is not fixed with the new gnome-media package update.
The volume of the devices are always reset to the base level when
replugging them. And I don't see this issue mentionned in the changelog
in comment #8.

Aw man, I'm glad I'm not crazy. I had reported a similar (identical?)
issue back in august, but nobody except me seemed to be experiencing it;
see bug #427520 (which also had its own upstream bug reports on gnome
and pulseaudio)
