I think this is due to the installer using the kernel framebuffer, which
adds overhead and makes VMs seem slower.
Try booting a server ISO, and at the cd boot menu, hit F6, then ESC, and
add fb=false to the end of the kernel boot line.
This makes the menus far snappier for me.
