I believe the ideal solution would be to adapt the default GDM themes to use the common aliases such as Sans, Serif and Monospace, instead of specifying individual fonts. I would mark this as an upstream bug for the GDM package at GNOME (hint, hint, who wants to do this?) -- gdm theme should

I had a chat with Athanasios and we concluded that the GDM themes do come from Ubuntu (and not from upstream GDM), from the packages mentioned in this report. The clean solution is for the themes to reference the Sans/Serif/etc font aliases instead of individual fonts. I recommend applying this
