Yes, I then see the account types available. Could there be some
solution to this? I understand why gossip-telepathy doesn't depend on
the protocols' packages, but perhaps a message in the accounts window
could be presented? (Just thinking out loud here.)

Did you installed some Connection Managers ? Try with those packages:
telepathy-gabble (Jabber)
telepathy-butterfly (MSN)
telepathy-idle (IRC)
Does it fixes your problem ?
