This bug also affects me, I tried vim-gnome and vim-gtk incase it was
something wrong with just one of the packages, but the problem is the
same in both.

I apologize. It seems this wasn't a bug after all. I don't know what
fixed it but now Gvim shows up in the dash and with a nice icon in the
launcher. The line in gvim.desktop still reads 'Icon=vim' but it seems
that doesn't matter.
