Hi! I just want to chime in and document my workaround to use a generic
UVC webcam with a built-in mic.
I attach a screenshot showing both a "multichannel input" and
"microphone" once the UVC webcam is attached.
Notice the picklist still does not contain an item for the system built-
in [analog]
This looks like a signalling problem. There doesn't seem to be any
corruption in the image. Only the signal to the monitor doesn't
correctly match the frequencies that the monitor requires.
As a workaround please try selecting 'Ubuntu on Wayland' from the login
screen.

There have been no updates to the 'bluez' package since 20.04 was
released. So that can't be the problem.
Most likely it's a kernel update that caused the problem. The most recent one
was only a week or two ago. Please try downgrading (or upgrading) your kernel
