When Firefox is started using a keyboard shortcut, a spinner until the
main Firefox window is loaded. This provides visual indication that it's
starting. When Thunderbird is started using a keyboard shortcut, no
spinner is shown until the main Thunderbird window is shown.

So the latest Disco Kernel (Bionic HWE 5.0.0-31-generic) seems to have fixed
all the issues with the touchpad. I can now touch the touchpad with all 5
fingers and it doesn't lock up and require me to restart the multitouch-hid
module.
It also seems that this version of the kernel also fixed
