I can reproduce it also with 3.40.4-1. Starting with
$ WEBKIT_DISABLE_COMPOSITING_MODE=1 evolution
as suggested on https://gitlab.gnome.org/GNOME/evolution/-/issues/1884
is a valid workaround.

It happens to me as well (display: Samsung 37in Full HD LCD - 1920 x
1080)
All the windows wider than something about 1024 pixels look black, they
display correctly if resized smaller (like half of screen width).
