I have the same issue. My Bose 700 connect and have sound output for
A2DP, but nothing when trying to select HSP/HFP.
Laptop: HP Spectre X360 2019
OS: Ubuntu 20.04.01 LTS
Kernel: 5.4.0-47-generic
Headset: Bose 700
