For me, setting middlemouse.contentLoadURL to false fixed the problem.

I found a fix. copying:
menubar menu[_moz-menuactive=true] {
color: MenuText !important;
}
menubar menu[_moz-menuactive=true][open=true] {
color: -moz-menuhovertext !important;
}
into userChrome.css fixes the problem for me

I created a new profile, like you said. The menubar works the way is
should. If I install a theme (I can list a few below) the menubar shows
the bug reported above.

this happens with or without compiz on. wait, is this a firefox 2 bug,
because I'm having this problem with firefox 3...

this doesn't happen unless there is a theme installed. but ANY theme
causes this to happen.
