The top bar appearance should only be controlled by: Gnome Tweaks > Appearance > Themes > Shell which isn't set or accessible in your screenshot... but maybe that's just because I asked you to uninstall 'gnome-shell-extensions'. Please try reinstalling 'gnome-shell-extensions' and then reopen

Also the screenshot in comment #9 shows you have a custom shell theme enabled (judging by the top bar), but none apparently installed or enabled in gnome-tweaks. If we can find out why/how your top panel is customized when it shouldn't be anymore then I think that might also explain this bug. --
