For me, the dock didn't freeze. I just wanted to try out cairo-dock from
the command line. When finished, I pressed Ctrl-C; this did not
terminate dock, but gave me a prompt back, so I did killall cairo-dock.
This is what I got:

Hello and thank you for this bug report!

Is there a freeze each time?
Here we have a stacktrace when quitting the dock (after having killed the dock 
I guess). Is it possible to share with us a backtrace when the dock is frozen?
You just need to install the latest development version from our Weekly PPA, 
then launch it with GDB, press "Ctrl+C" when you have this bug and you'll be 
able to get a backtrace. It's explained in details there:
