Unfortunately we can't do too much about this here, because this is
about a specific problem of the graphics driver in Wine with a specific
game.
I see you are not using the Ubuntu Wine packages, but are already
building Wine from source.
Please consider filing a bug at https://bugs.winehq.org/.
You may also check the games entry in the Wine AppDB:

I also suggest to install some dll overrides for d3d with winetricks.
