I'm afraid I really really needed this desktop to be ready so I can't repeat the tests. I'm sure you can repeat this yourself using a VM which is given a pair of 32GB drives, going to the "try xubuntu" not "install xubuntu", bringing up a shell and creating a partition table and making the mdraid devices manually, as per the first post. I tried a few more things after this bug report/ticket was generated automatically, but basically the installer is incapable of installing onto mdraid devices, or at least doing this when in UEFI mode. There's also the issue that it asking where to install the bootloader is probably an incorrect term anyway, since it's UEFI! I ended up doing an mdadm --zero-superblocks on all raid devices, partially zeroing out the drives, and starting from scratch and did a non mdadm-raid install, and then manually creating half mirrors, and migrating to a mirrored environment that way. I've tried telling the installer to install bootloader to /dev/sda3, /dev/md3, all sorts, it always fails. Oh, and the installer need to run "mdadm --assemble --scan".
