My apologies for the size of the log. This is the output for the last
boot and forward til today? I have compressed it to save space, but once
inflated its is 800 mb.

Thank you for your bug report. The first issues sounds similar to bug
#1870356
Could you add your 'journalctl -b 0' log after trying to change the
profile? Could you also try with pavucontrol and see if it behaves the
same way?
