Since this is not the default, I don't think it makes sense to wait

Accepted gcc-11 into hirsute-proposed. The package will build now and be
available at
https://launchpad.net/ubuntu/+source/gcc-11/11.1.0-1ubuntu1~21.04 in a
few hours, and then in the -proposed repository.
Please help us by testing this new package. See
