Update, I can flip my webcam using this :
LD_LIBRARY_PATH=/usr/lib/x86_64-linux-gnu
LD_PRELOAD=/usr/lib/x86_64-linux-gnu/libv4l/v4l2convert.so cheese
That command won't work if libcamera is installed.
