Ok, trying to rephrase the problem :-) I have a laptop (Thinkpad T430s) hooked on a dock, then an HDMI monitor with embedded speakers (Asus MX27AQ) on the dock. Before upgrading to 19.04 ongoing release, I was able to choose HDMI speaker as sound output, from the sound setting in Gnome shell.
