Apport-collect told me that I don't have the package libreoffice, so
changing to libreoffice-writer

This is the result of the other command:

 'libreoffice-writer' is a binary package. This bug has been assigned to its 
 source package 'libreoffice' instead.

OK, I'm installing the libreoffice package then.

  When I try to embed a pdf file, as an embedded document in libreoffice
  writer, it tries to import the pdf file as a text file, instead of just
  displaying a pdf icon that I can click to open.
  
  To reproduce the bug, 
  1- start libreoffice writer 3
  2- select from the menu InsertObjectOLE Object...
  3- select the Create from file radio button
  4- click the Search... button
  5- select any pdf or other non plaintext, non libreoffice compatible, or 
binary document
  6- click the OK button
  
  Expected behaviour : an icon representing your document should be
  inserted. Clicking on the icon should open the document using the
  appropriate program.
  
  Observed behaviour : an ASCII Filter Options dialog is displayed.
  Clicking OK in that dialog will insert a frame containing the text from
  the pdf file (as if you just cat the pdf file).

Ok, I installed libreoffice-pdfimport and now when I insert a pdf file, it 
inserts a frame with the pdf content. 
That's good, but it's still not possible to insert a clickable icon instead of 
the actual document. 
If for example I would like to insert a zip file instead, I just can't.

Your original issue was due to you not having libreoffice-pdfimport
installed. The LibreOffice debugging article

prevent this.

As per http://help.libreoffice.org/Common/Insert_OLE_Object you will not
be able to have a clickable icon, other than the actual document
embedded as an object, as you saw.

If for example I would like to insert a zip file instead, I just
can't.

This desire to be able to embed any file extension type seems to be a Won't Fix 
Wishlist as per 
https://wiki.ubuntu.com/LibreOfficeBugWrangling#Wishlist_Reports . With this in 
mind, if you want to see in LibreOffice both a clickable object, and desire to 
embed any file extension type, this should be split up into two different bug
