I resolved the problem with Find by going to
System Settings -> Language Support
setting Keyboard input method system to None (from IBus)

I gather that this is not satisfactory if your usage requires IBus.
The problem that Alt-F4 has stopped working
An additional problem is that Alt-F4 has stopped working as Quit. This
is a very recent development (more recent than the breakdown of
find/search).

I got this ibus warning instead:
IBUS-WARNING **: Unable to connect to ibus: Could not connect:
Permission denied
and the following work-around worked for me:
$ rm -r ~/.config/ibus
although why this helps, or why only evince seems to have input problems
with ibus remains a bit of a mystery.
I'm experiencing the same issue. I have "proposed" enabled as well.
I found this debug message after trying to type a few characters into
the search textfield:
(evince:21835): IBUS-WARNING **: Events queue growing too big, will
start to drop.
Maybe this info is useful. Restarting ibus daemon
I gave up on that ... took "proposed" repo out. I have a couple of
deadlines to meet and don't have time to troubleshoot a bleeding edge
repository. ;-)

1. I can type in the Search field in Evince with my laptop, which does not have
"propose" enabled.
2. Evince installed version is evince 3.18.2-1ubuntu4 on said laptop,

workstation with "proposed" when I get back home.

I have two systems, a workstation with "proposed" and a laptop with
straight Xenial. Both have the same version of Evince. So it's probably
an underlying desktop library that recently showed up in "proposed".

Note that my computers are updated with the xenial-proposed. I'm quite
sure that Evince used to work just after the upgrade to 16.04, and that
this is a recent regression.
