I've had the same problem since I first started using Gedit regularly. I have the auto-save function set to every 1 minutes so the UI locking up can be very irritating. I've had this problem with Gedit on Ubuntu and Linux Mint. I've also had this same problem with Xed, so, that implies that this is an old bug hidden deep within the Xed and Gedit shared code.
