Hello, sorry to be getting back to you so late. I just tried your
previous suggestions and the bug still persists. Also, in my previous
screenshot the top panel was displaying according to the default theme
setting.

The top bar appearance should only be controlled by:
Gnome Tweaks > Appearance > Themes > Shell
which isn't set or accessible in your screenshot... but maybe that's
just because I asked you to uninstall 'gnome-shell-extensions'.
Please try reinstalling 'gnome-shell-extensions' and then reopen
I can confirm that the 'Large Text' option is switched off, however even when
it is switched on the lock screen components remain the same.
Also, where can I go to see the top bar configuration?

Also the screenshot in comment #9 shows you have a custom shell theme
enabled (judging by the top bar), but none apparently installed or
enabled in gnome-tweaks.
If we can find out why/how your top panel is customized when it
shouldn't be anymore then I think that might also explain this bug.

Please try clicking on the icon of the person on the login screen (top
right of the screen) and check that 'Large Text' (and everything else)
is turned OFF.

Actually, first please ensure your shell theme is the default one:
Gnome Tweaks > Appearance > Themes > Shell = nothing or Yaru
and then reboot.
If that hasn't fixed it then please:
sudo apt remove gnome-shell-extensions
and then reboot.

Apologies on the late response.
I don't have any other non-Ubuntu extensions installed, however I'm unable to
find where to uninstall the "user-theme" extension

Oops. Come to think of it the login screen runs as a different user and
that's a system extension. So disabling anything in the GUI won't
work... Please try:
1. Uninstall the user-theme extension and any other non-Ubuntu
extensions.
2. Reboot.

Yes this problem still occurs after disabling the user-theme extension

Does the problem still happen if you disable the user-theme extension?
You can disable it in the 'Extensions' app (gnome-shell-extension-
prefs).
