Further reading would suggest that it's a bug in Nautilus and the way that gvfsd deals with trash: https://www.reddit.com/r/gnome/comments/l0gg32/a_helpul_tip_for_those_with_gvfsdtrash_hogging/ It runs out that I don't have ding installed, and also no references to gvfsd. Yet, if I do as the post above says and kill the gvfsd process when it's running it stops my root drive filling up with an enormous syslog. I would suspect, that this "DING" does not refer to the program ding but is some kind of bell that is ringing in gnome-shell or nautilus. ding does not have to do anything with gvfs or the like (except you have configured it in a very strange way).
