No, there is no hard drive activity when sitting at the cursor, and I
left it for a few hours yesterday and it was still stuck there. All of
the volumes are clean and have the mount count/interval set to -1 or 0
so it shouldn't do a full fsck on any of them anyway.

I might try the ubuntu-boot PPA later on today.

The version from the PPA has now been uploaded to the archive (0.2.0)

I'd appreciate it if you could try this version, if it still fails,
please run sudo mountall --debug and attach the output

Actually the fstab line for the second drive is a red herring. Twice,
commenting out that line and rebooting was followed by a successful
boot, but this morning it failed to boot even with that line commented
out.

Does the hard drive activity continue? It could be a detailed fsck
happening with no output on screen, as in bug #446596 or it may be
related to bug #443080. My experience is related in bug #440896 .

I had a similar problem, and the fsck took about 10 minutes before boot
continued - if it is doing your 1 TB disk it could be a very long time -
my disk is 160 GB. So one time when it seems to die, try just leaving it
for an hour or two and see if the boot does then complete.

Also, are you using the ubuntu-boot ppa? If so you might want to try the
latest version which has fixed bugs for me at least - to quote from the
comment in a number of other mountall bugs:
