Does anyone know if it's possible to do this in Ubuntu, with any
particular PIM? (Currently synching a Nokia 6500 with Outlook using
Nokia PC suite)

Nearest I've got so far is to use the Calendar and Contacts on Google
Mail. I'm able to sync these with my Nokia e63
